Chicken Fajitas

As I was making this dish tonight I knew two things, 1. my picky 3 year old would eat something out of this meal and 2. it was taking me forever to make it with two children going bananas in the other room. Despite their efforts to pull me away from the stove I got it made and thankfully everyones bellies were full from a good dinner.

 

Directions

Trim the fat from the chicken breasts.

In a large plastic bag add lime juice, cilantro, water and oil.

Shake everything well and then add the chicken breasts.

Let the chicken breasts marinate for 30 minutes up to 3 hours.

When you are ready to cook the chicken remove it from the plastic bag and dry it off.

Place the chicken on a cutting board and rub it with paprika, salt, pepper and oil.

Heat a cast iron grill pan and add the chicken.

Cook both sides for 8-10 minutes turning a quarter turn half way through the cooking.

Remove the chicken and add the peppers and onions to the grill pan and cook them for another 10 minutes stirring frequently.

Season the onion and pepper mixture with salt and pepper.

Lastly slice the chicken and add it in with the onions and peppers.

Top everything with fresh squeezed lime juice and cilantro.

Serve with tortillas, salsa, guacamole, sour cream, cheese and whatever else you want.

Ingredients

1 -pound of chicken breasts (about 3 chicken breasts)

2 cups red and orange peppers, deseeded and cut into strips

1 yellow onions, sliced

½-1 red onion, peeled and sliced

1-tablespoon paprika

1-tablespoon olive oil

Salt and pepper

Ingredients for marinade

2 tablespoons olive oil

Small bunch of cilantro

1 cup of water

¼ cup limejuice
