Black Beans

The black bean is also known as the Turtle Bean.

It’s a great bean loaded with lots of health benefits and very versatile.

This black bean recipe is super simple and delicious. It pairs well with any Mexican style dish.  If you’re a vegetarian all you have to do is add vegetable base rather than chicken base to make it work for you and your family.

 

Cooking tips for dried beans:

  • Soak dried beans for at least 8 hours before cooking.
  • To reduce gas from the beans throw out the soaking water and add new water. (Beans do release some of its nutrients into the water so, to retain those nutrients, keep the soaking water and prepare for a gassy evening.)
  • Add acids and salt at the end of the cooking process to prevent the beans from becoming too firm.

Directions

  1. Rinse the black beans in a strainer with cold water.
  2. Add the black beans, paprika, green onions, base and water.
  3. Bring the black beans to a boil and then simmer them on a low temperature for 20 minutes.
  4. Serve.

Ingredients

  • 1 can of black beans (you can use dried but you’ll need to soak them)
  • 1-tablespoon paprika
  • 2 green onions, top and bottom trimmed
  • ½ tablespoon Better than Bouillion chicken base (if vegetarian use vegetable base)
  • 1/3 cup of water
  • Pepper
  • Salt (this dish will be salty from the base and the cans so add salt sparingly)
